Gluten Free Peach and Blueberry Granola; vanilla and honey sweetened crispy buckwheat, chewy peach cheeks, pops of blueberries, toasted coconut and crunchy toasted nuts. A delicious snack and a fabulous breakfast!
So, I have just come to the realisation that the photos may not make it into this post… I say this because, I have almost eaten the entire batch of this granola while Pinteresting (you can find me here → Kirst @ Treat Yourself Sweeter) Eating while pinning is dangerous… like shopping when you are hungry (which I also did today… I filled the car.. for 2 people and a cat!)
This recipe is full of all good stuff… but I am sure eating an entire batch kinda outweighs that. Actually, not true… it can’t be the entire batch, I gave a cup to my Dad to try. lol. ONE cup… stingy but true. In my defence, that is how much the jar held… a little selfish strategy might have been involved there too 😉

I got this in Bali last year… last minute run to the market… the ‘we can’t fit anymore into the bag Kirsten’ type of market run (you can ALWAYS find room…!) the clincher…

Sun, cocktails and a view of a rumbling volcano and lush, green jungle. Did I mention the beach.. pool… amazing food… ah, and the shopping?!? Beautiful people… lazy breakfasts (you know how I feel about lazy breakfasts!). Ekkk… lucky those kids are cute…

- ¼ cup coconut oil
- 1 tablespoon honey
- 1 teaspoon vanilla extract
- 1½ cups puffed buckwheat
- ¼ cup flaked coconut
- ½ cup dried blueberries
- ½ cup dried peaches - chopped
- ¼ cup pistachios
- ¼ cup macadamia nuts
- Preheat the oven to 170 degrees.
- In a medium saucepan add the coconut oil, honey and vanilla. Mix til combined.
- Add the puffed buckwheat and stir until it is covered well by the coconut oil mix.
- Place on a tray covered with baking paper and bake for 5 minutes. Add the coconut and bake for another 5 minutes. Mix before putting into the oven.
- Add the fruit and nuts, mix and bake for another 5 minutes. Once brown and crunchy, remove and allow to cool.
