I’m BACK! Whoo hoo..
When I moved into my OWN new little piece of paradise I thought I had hit the jackpot… first day of renovating and 3 neighbours had stopped to introduce themselves and let me know they are a ‘painter, plasterer, brickie’ and to yell out if I needed help (argh… YES I need help, don’t let the baggy jumper fool you… there ain’t no big muscles under here!!) By the end of the first weekend I had met half the street and figured that between everyone here… we could probably build the Taj Mahal V2 in record time. Nice people…
Not all of the neighbours were as friendly though and I am pretty sure that the loud banging, delirious midnight chattering and let’s be honest… lots of swearing (not from me of course…my other two renovating amigos :p )were pretty, well… peeved. And to be completely honest… I was peeved at them.
I knew this house needed some serious TLC, but when someone comes between me and baking cupcakes… grrr, my darkside comes out. Well, it’s not someone but someTHINGS. When I discovered the extra big oven didn’t work the day before moving in, it sucked… it was the one original thing in this place they was ‘in good condition’, so when I got it fixed.. a small happy dance may have happened 😉 OH MY GOSH…
No one EVER told the mice they needed to move out too… my little micey neighbours seemed to have (at some stage… ALL gone now) had peed in the oven insulation… I know it’s gross and honestly the smell when I turned the oven on could have wiped out a small country but I need someone to share in my pain while I crave cookies and cakes until it’s fixed…
So, I am turning to… or more accurately, obsessing over my favourite meal of the day… breakfast!! Hours of holiday Googling had lead me to a new obsession… dessert breakfasts. Oh.. my.. gosh.
I personally think it is an amazing idea…. eat as much as you want and then you can work it off during the day :p
This is my little contribution to the world of delicious, sweet dessert, whoops – I mean breakfast 😉 This is perfect for lazy Sundays and also quick enough for a mid week morning pick-me-up. I am also a little obsessed with fruit toast, so I like to serve it on thick rye, sourdough fruit toast… but anyway is good 😉
Do you have a favourite sweet, dessert worthy breakfast dish? Or maybe some 4 legged neighbours…?? 😉
- ⅔ cup (firmly packed) low fat firm ricotta
- 1 tablespoon milk
- 1 teaspoon honey
- ½ teaspoon vanilla extract
- 1 tablespoon crushed raspberries
- ½ banana
- 2-4 pieces of toast (depending on how thick you want the ricotta)
- Mix the ricotta, milk, honey and vanilla using a stick blender to combine so it is smooth. If you don't have a stick blender, you can use a fork to combine but it won't be as creamy.
- Break the raspberries up into small segments and gently fold through the ricotta mix.
- Spread on toast, top with chopped banana and drizzle with honey if desired.
