Ah, Christmas season is over and it is that time of year when everyone starts thinking about their New Years resolutions;
Well, everyone but me.
I just don’t want to disappoint myself with promises I probably won’t keep, so instead I remind myself that I need to reinvest in myself and recoup my energy and find myself again, before the craziness of the year begins. This then changes with me throughout the year, hello no more guilt about missed gym sessions!

And that MIGHT have been followed up with having eaten the remainder for breakfast… 😉 but hey, it is Christmas!
(now I feel like chocolate, again…)
I also spent some valuable time today getting back into the swing of exercise and creating some yummy treats to share with you all (picture healthy, banana chocolate choc chip ice cream balls… yep, coming your way soon..)
I am so happy with these little burgers. You can make them big for a meal, or small as appetizers. They are tasty, wholesome and perfect for summer or the winter weather.

- 125 grams of pumpkin - chopped into 1cm cubes and boiled
- ½ cup red quinoa (uncooked)
- 1½ cups chicken or vegetable stock
- ½ brown onion - finely diced
- 1 small clove garlic - crushed
- 1 egg - lightly beaten
- Coconut oil for cooking
- Salad to serve
- Place the pumpkin in a small saucepan just covered with water and boil until soft.
- Meanwhile, place the quinoa and stock in a small saucepan over a low-medium heat and simmer until the quinoa is cooked and had absorbed all of the stock. As all brands can be different, refer to packet for further details.
- While the quinoa and pumpkin are cooking, in a small, non stick pan add a small amount of coconut oil and add the onion. Cook over a low heat until transparent and has begun to break down and caramelise.
- Add the garlic to the onion and cook for another 2-3 minutes. Remove from the heat and place in a medium bowl.
- Strain the pumpkin and discard any liquid remaining in the cooked quinoa as well.
- Lightly mash/break up the pumpkin with a fork and add, with the quinoa to the onion mix. Add the egg and mix well.
- Using your hands, form patties of the mixture and place into a hot pan with coconut oil. Cook for roughly 3-5 minutes each side, or until the turn a golden brown and go slightly crispy. Gently flip to cook the other side.
- Serve with fresh salad.
