Even as I type that title, it seems weird to me…
Pizza, sweet, tropical… watermelon?! It just doesn’t seem to work… but let me tell you, it SO works! Can’t you almost taste the sweet, juicy watermelon?!
This is one of the quickest, easiest pizzas you will ever make and one you can have for breakfast… bonus.
When you have just faced a 35 degree day and you are staring down the barrel of a week of mid-high 30’s, watermelon and air conditioning are two of your best friends. In all honesty, when it is that hot I don’t really feel like eating much (okay, that doesn’t stop me though!). I could easily survive on a few salads and fresh, cold fruit… my favourite being anything tropical.
I originally created this in honour of returning to work. I was trying to think of some healthy, back to school afternoon, post school snacks. I remember the days that my cousins and I would all file through the door of Grandma’s, my aunty’s or my house. There would be a wide selection to choose from- fruit, cakes, biscuits or warm pikelets, pancakes and like all good Hungarian grandmas… Frankfurts in winter with our own little coloured forks. One for each of us… mine was pink and I wonder whatever happened to that…
I loved those times and not for the food (shock horror), but it made me feel like they were glad we were home from school- although being a teacher now and knowing how loud we were, the arguments we had… blah, blah… I am not so sure they were that happy to see us all… maybe not all at once anyway!
Having this on the table would not only be healthy, colourful and inviting-but also delicious and refreshing. Not just for kids- this is rapidly becoming one of my favourite snacks. The combination of fresh fruit, mint leaves and chocolate is awesome- add the creamy passionfruit yoghurt and oh. my. gosh… love on a plate.
This recipe is unbelievably forgiving… if you can call it that. This ‘recipe’ is really just all about assembling and you can easily exchange the fruit for your favourite combinations… a few new ones just popped into my head right now. I think I am going to need more watermelon!

- ¼ cup low fat plain yoghurt
- 1 large passionfruit -pulp only
- ½ teaspoon vanilla extract
- 8 slices of watermelon
- ½ banana- sliced
- 25 grams blueberries
- 50 grams kiwi fruit -slice
- 30 grams strawberries sliced
- small handful fresh mint leaves- roughly chopped
- 5 grams grated dark chocolate
- In a small bowl add the yoghurt, passionfruit and vanilla extract. Mix thoroughly and set aside.
- Arrange the watermelon on a plate and then place the banana, blueberries, kiwi fruit and strawberries on top.
- Roughly spread mint leaves on top, grated chocolate and then serve with passionfruit yoghurt on top.
- Assemble just before serving and store left overs in the fridge
